Canning Tomatoes and How We Automated the Process

Looking back at history offers some insights into how we approach the current COVID19 pandemic. When the food industry moved from manual preparation and canning of tomatoes to an automated system, we increased production dramatically. The change was significant adding to the availability of cheaper more available foods to more people. What was interesting in that innovation is probably one of the most important elements was the focus on changing the variety of tomatoes being grown to make them more resilient to the automated picking technology.
